Da secoli qui si pescano grandi quantit\u00e0 di frutti di mare e pesce per garantire il sostentamento della popolazione locale. Molti piatti tradizionali baschi sono a base di prodotti del mare, principalmente frutti di mare e pesce come il merluzzo (baccal\u00e0), il nasello, i calamaretti e le granseole pescati nelle fredde acque dell&#8217;Atlantico. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Il merluzzo, generalmente essiccato e salato, \u00e8 un ingrediente onnipresente nella <\/span><span style=\"font-weight: 400;\">cucina basca<\/span><span style=\"font-weight: 400;\"> data la sua facile conservazione e la sua natura economica, caratteristiche fondamentali durante i periodi di carestia e il regime di Francisco Franco. La cottura richiede molta attenzione, poich\u00e9 la qualit\u00e0 del piatto dipender\u00e0 principalmente dalla tecnica utilizzata per ottenere la gelatina di pesce, che mescolata con gli altri ingredienti rende il sugo pi\u00f9 gustoso e ne crea la giusta consistenza.
